No-Bake Mini Strawberry Shortcakes
This week went by fast. I can’t believe we are just right around the corner from summer. 8 days to be exact. As we begin to get closer, we are getting things ready here at The Off-Beat Lifestyle home.
That being said, our kitchen is undergoing a small renovation. Which means we don’t have access to an oven or stove!!! Which brings us to today’s recipe. A no-bake strawberry shortcake. This can be made anywhere.
Mini but Powerful!
Cut strawberries. Then place in a medium size bowl. Add sugar. Then mix together with a wooden spoon. Let sit for 5 minutes (this will allow the sugar to melt onto the strawberries.)
Using a small bread knife cut madeleines in half. Then cut horizontal. Place the bottom of one of the madeleines on a tasting plate. Add a layer of strawberries, a little whip cream, then add the top part of the madeleine. To finish, add a small drop of whip cream. Sprinkle some white sugar.
If you want to add another lay, do the same thing. Add a toothpick through the strawberry shortcake so it keeps its shape!
Add a touch of edible sparkle, for a shiny finish!
One bite = delicious
You can make these mini shortcakes at work, school or at home.
