Sunday Sundae: Mocha Blast Ice Cream (Dairy Free)

It’s been a while!

Hi everyone! I am so sorry I have been absent the past few weeks. A lot of different things have been happening. I have been pretty ill the past month and still fighting. Our kitchen was being renovated……and now we have to get our electrical wires changed in the entire house. So needless to say, life has been an adventure the past few weeks.

My boyfriend was fighting some major sleepiness this past weekend. I thought to myself. “Wouldn’t it be nice to have some nice mocha ice cream to boost his energy levels?”

Let’s get to it!

Ingredients

Instructions

  1. Chill mixer bowl night before. 
  2. Add coconut milk into a blender, blend until smooth. Add espresso and vanilla extract into coconut milk. Blend for 1 minute. (To add a sweeter taste, add 2-3 tbsp blue agave)
  3. Transfer coconut milk mixture to an ice cream maker. Add marshmallows and pecans. Follow manufacturer’s instructions for ice cream.
  4. Freeze for 2 hours before serving. 
  5. Add coconut milk into a blender, blend until smooth. Add espresso and vanilla extract into coconut milk. Blend for 1 minute. (To add a sweeter taste, add 2-3 tbsp blue agave)

If you are simple like me, you might enjoy this delicious pick me up in a cone!

But…..

If you are extra…..well scoop your ice cream into a sundae cup. Add two scoops of mocha blast ice cream. Drizzle some m&m’s, pecans, Reese’s Ice Cream Sauce and some sprinkles. BECAUSE life is better with SPRINKLES!!
