Banana Chia Seed Pudding with Thunderbird Bar Crumble

For many years I felt guilty during the holiday season. Every where I looked there was delicious looking desserts…..but they were not the best options. I am sure I am not the only one who has come across this problem.

So what is the solution to surviving the holiday season with out sacrificing taste and health? Create a dessert that is nutritious for our bodies and tastes yummy.

I am excited to be sharing one of my favorite desserts that helps on those days that you are having a sweet tooth. I don’t have to think twice about what’s going into my body because it is all GOOD! Best part, you can eat this anytime of day….even for breakfast!

Two of my favorite things are in this recipe!

Firstly, chia seeds! Chia seeds are full of so many good things. They are high in fiber, protein, omega 3’s!

Secondly, Cashew Fig Carrot Thunderbird Bars! These bars are packed with all natural ingredients, plant based, vegan, gluten free, paleo, and zero added sugar! They taste like the classic fig-newtons and carrot cake with the perfect consistency of chewy and soft. Which makes them perfect for a pudding crumble/crust.

Instructions

Part I: Banana Pudding

In a large bowl mash together, bananas, maple syrup, vanilla extract and oat milk.

Place batter into a food processor and pulse until it’s a smooth consistency.

Pour batter back into large bowl. Whisk in chia seeds. Let sit in for 30-50 minutes in fridge. (it will turn to a thicker consistency over time)

Part II: Thunderbird Crumble

In a food processor add 3 Thunderbird bars, chia seeds and dates. Pulse until it becomes a sticky consistency.

Part III: Pudding Time!

Using your favorite jars/cups, add a generous layer of Thunderbird Crumble. Pour banana pudding over crumble.

Top pudding with blueberries, raspberries, coconut shreds, Thunderbird crumble and a tad bit of honey (optional.)

Store pudding for up to 5 days in the fridge in an airtight container. Or Enjoy after making!

Recipe Notes:

If you desire pudding to be thicker, place pudding cup in fridge for 15 additional minutes after the first initial 30 minutes.
