Easy & Healthy Kohlrabi Salad

About three weeks ago, I signed up for this local organic veggie box. I am all about supporting local farmers and artist! I was extremely excited to be getting my first box from Basanti Organics. This cute organic farm is a one woman farm! It so happens to be one of my old childhood friends who owns and runs it! Pretty cool right!?

As my boyfriend and I looked through all the veggies that came with our first veggie box order. We came across a vegetable that we hadn’t seen. It looked a little but like a turnip….but we knew it wasn’t that.

I instantly messaged a picture to my dad…..Because dad’s are supposed to know everything right? He messaged back saying, “That’s kohlrabi.” A whaaaaa??? He explained that its a vegetable that is part of the Brassica family. It’s closely related to cabbage, broccoli and cauliflower.

Of course I asked him what I could use it in? How do you cut it? He told me different ways that it can be used and spiced up! This was a whole new world for me! My father explained that kohlrabi can eaten cooked or raw. You can turn it into fries, mix it into a stir fry or make a salad! So on a Sunday afternoon, I got inspired to create a refreshing salad.

What does Kohlrabi taste like?

It is important to know where the word originated from in order to understand what it is. Kohlrabi is a German word. It translates into “cabbage turnip” in English. Funny thing, that is exactly what Kohlrabi tastes like! It’s taste is similar to cabbage. Mixed with a turnip like taste and look. It also has little spicy to it, kind of like black pepper. With a slight sweet taste. A very interesting but kind of works together taste!

Instructions

Thinly slice kohlrabi, making into matchsticks. (Peel and trim kohlrabi. Cut off the ends, cut in half. Then thinly slice.)

Cut carrots into thinly planks. Place in a medium bowl with chopped bell peppers, cilantro, almonds and lemon zest.

Squeeze lemons into a small bowl. Whisk together, lemon juice, salt and pepper. 

Toss with salad until everything is well combined.

Refrigerate until serving. Garnish with zest, almonds and cilantro. Also tastes delicious the next day!

Ingredients
  

  • 3 kohlrabi
  • 2 carrots
  • 1 orange bell pepper
  • 1/4 cup cilantro
  • 2 lemons
  • 1 tsp Kosher salt
  • 1 tsp ground black pepper
  • 1/4 cup shredded almonds
