Easy Birthday Cake Truffles (Gluten-Free & Dairy-Free)

These Birthday Cake Truffles are the ultimate treat for birthday cake flavored enthusiasts!

It is almost hard to believe that a gluten free recipe could taste so good! These are the perfect treat for a special occasion like Valentine’s Day, Birthday Parties or any family/friend function! Or on a day when you are feeling like TREATING YO SELF!!! (tots okay)

The Ingredients

Goodie Girl Gluten Free Birthday Cake Creme Sandwich: Has such a great taste that you don’t even know it’s gluten free. Which makes it perfect for making these truffles! They are also peanut free, which means everyone in your family and friend circle can enjoy them!

Keto friendly Rainbow Sprinkles: These sprinkles are sure to impress! They are mode from natural sugars and dyed with vegetable juices! So you don’t have to worry about those artificial colors going into your body! YESSSSSSSS!!!

Dairy Free Cream Cheese: I don’t know about you. But dairy is not my best friend. With recent medical conditions happening it is nice to know that there is dairy products out there that won’t cause discomfort!

Instructions

Line a small baking sheet with waxpaper. In a large bowl, combine glute-free birthday cake cookies and crush. Mix in rainbow sprinkles.

Add In a small bowl, add dairy-free cream cheese, powdered sugar. Mix together with a hand mixer until creamy. Then add vanilla and salt. Mix until combined together. Grab crushed cookies, and combine into cream cheese mixture. Mix until well mixed together.

Using a small cookie scoop, form the birthday cake cookie mixture into small balls and place on baking sheet. Repeat until all cookie mixture has been used. Then place baking sheet in freezer for 10 minutes.

Well cookie balls are in freezer. Ina a medium bowl add white chocolate. Microwave in the oven for 30 seconds. Repeat until chocolate is melted. 

Once cookie balls are chilled, dip them in the white chocolate. Then place on the baking sheet. 

Sprinkle the rainbow sprinkles as you go. Then return to freezer for 10 more minutes. Then serve!

  • 4-5 oz dairy-free cream cheese green valley creamery
  • 1/4 cup powdered sugar (optional, recipe can be made without)
  • 2 tbsp rainbow sprinkles
  • 1 tsp vanilla extract
  • pinch kosher salt
  • 1 1/2 cup melting white chocolate
