One Pot: Vegan Potato & Kale Curry Soup

This Vegan Curry Soup with potatoes, kale, onion, green beans and coconut milk is perfect for those days when you want something rich in flavor and comforting.

Soup is one of my favorite dishes to make. There are truly so many different ways to make soups. In my eyes there is no wrong or right way to make a soup.

This soup takes me back to my parents tiny little yellow kitchen in their totally adorable pink farmhouse. Every night my dad would cook something fresh from our garden. With a mix of a few things from the grocery store. We grew up with not too much money. So my dad would always make everything go the extra mile, well not losing its taste.

The way my father cooks truly shaped how I do. He is the reason why I developed my love for soups! Soup is a great dish to make on a budget….and it TASTES GOOD!

Instructions:

In a large pot sauté over medium heat add olive oil and allow to warm. Then sauté onion, cook stirring occasionally until onions are soft and lightly browned.

Add the curry paste, salt and pepper and cook for a minute more.

Add the potatoes, mixing well with the onions. Then add coconut milk, give it a quick mix with the potatoes. Finally add the broth, water and green bean (optional.)

Increase the heat to high to bring to a boil, then reduce heat to medium-high or medium. Enough heat to maintain a simmer. Let soup simmer uncovered for 20-25 minutes.

Add the sesame seed oil, green beans and kale; cook for an additional 5 minutes or until vegetables are cooked all the way. Squeeze in half of a lemon into broth.

Add noodles, cook for about 7-10 minutes or until noodles are throughly cooked.

Serve soup warm. Garnish with chopped cilantro or parsley, more lemon juice, and/or jalapeños.

Ingredients
  

  • 2 tbsp Olive oil
  • 1/2 white onion
  • 2-5 tbsp red curry paste (flavor to liking) Thai Kitchen Red Curry Paste
  • 1 tsp salt
  • 1 tsp pepper
  • 3-4 small red potatoes diced
  • 14 ounces coconut milk
  • 1 quart vegetable stock
  • 2 cup water
  • 1 tsp sesame seed oil
  • 2 cup green beans optional
  • 1 bunch kale
  • 1 large lemon squeezed
  • 2 bunches vegan noodles Mr. Noodle Vegan XO Sause Noodle or asian noodle such as ramen.

Garnish Ideas

  • cilantro
  • Thai basil
  • jalapeños
