Cauliflower Alfredo Sauce (Vegan & Paleo Friendly)

This Cauliflower Alfredo Sauce is super creamy and extra delicious! In just a few short steps you will have the perfect sauce to pair with your favorite pastas and veggies!

This sauce comes with no stomach aches! It is also vegan and Paleo friendly. Just make sure to choose a pasta that fits your diet.

Healthy Sauce!

Cauliflower can literally be turned into anything now days. Are is it just me? I have seen cauliflower be turned into rice, waffles, chicken nuggets, wings……PIZZA CRUST!!! And if cauliflower can be turned into that….then we can be whatever we want in life.

In all seriousness, cauliflower has some really great nutritional benefits.

They are great source of fiber in a meal! In just a cup of cauliflower you can get 3-4 grams of fiber! That’s about 12% of the fiber our body needs daily.

Cauliflower is high in choline, which is good for brain development! It also helps aid in keeping our metabolism functioning at a healthy rate.

Instructions

In a pan sauté the garli in oil over low heat. Allow to cook for a few minutes until garlic begins to become soft and fragrant. (Keep temperature low, we don’t want the garlic to brown.) Then add thyme and garlic, and mix together with garlic.

Add cauliflower, and combine well with herbs. Add onions (optional.) Sprinkle a little bit of salt, Italian salt and pepper. Lastly pour water over cauliflower and bring water to a boil (at medium heat.) Once water is boiling lower the heat to simmer and cover the pot to cook the cauliflower is tender and very soft. This will take about 10 minutes.

Once cauliflower is cooked, transfer the entire cooked veggies into a blender or food processor, and additional season with salt, Italian salt and pepper, if needed. Blend until very smooth and creamy. If needed add more boiling hot water to blender until reaching texture desired. (2 tablespoons at a time.) Be careful when you are blending hot liquids, the pressure does tend to build up, take caution when opening the lid.

Season with additional herbs, salt and pepper, if desired. Serve wam with your favorite pasta or veggie substations!!

Cauliflower Alfredo Sauce

This vegan and nut-free Cauliflower Alfredo Sauce Is a healthy pasta sauce! It’s puréed which makes for a creamy sauce, that pairs well with pasta, zucchini, and your favorite vegetables. It is super easy to make, the taste is delicious and its Paloe friendly.

Ingredients
  

  • 2 tbsp extra virgin olive oil

  • 1/2 half onion sliced thinly (onion ]optional)
  • 1 1/2 cup water
  • 1 tsp salt or more to taste
  • 1 tsp black pepper
  • 1 tsp Italia salt

Notes

Don’t see fresh cauliflower at the store? This recipe can be made with frozen cauliflower.
No full head of cauliflower? Or don’t have time to cut it, grab a bag of 12 -18 oz of cauliflower florets.
