Healthy Pepper Egg In A Hole

This healthy Pepper Egg In a Hole recipe is super easy to make and light breakfast that wont have your stomach feeling heavy. This dish is full of color and and flavor, well being low carb and keto friendly!

Eggs in a Hole is a traditional breakfast that is made with bread, you cut a hole at the center of a piece of breads toast it on a skillet and crack an egg in the middle. Hence, Egg in a Hole.

This recipe hold everything that the classic egg in a hole has, but it is HEALTHY and EXTRA DELICIOUS! You’ll be having more veggies well enjoying breakfast.

What Kind of Bell Pepper to Use?

You can use any kind of bell pepper! There is no right or wrong bell pepper for this recipe. Choose a red, orange, yellow or green. They will all taste delicious! Want your plate to look more colorful, use multiple colored bell peppers. Have fun with it!

Low Carb & Keto Friendly

Because we take out the bread from this traditional Eggs in a Hole, this calls for less calories! Making this recipe low carb…can I get a HECK YEAH! It is also Keto friendly! You won’t even notice you are having a wholesome, delicious, healthy breakfast when you take a bite out of one of these Healthy Pepper Egg in a Hole’s!

Instructions

In a large skillet, heat olive oil over medium/high heat. Cut peppers into 3/4 inch rings and remove the seeds and centers. Plac sliced peppers into the pan and let them sauté for a minute or two, then flip to the other side and repeat.

Crack one egg into the center of each bell pepper slice. (Do it as slow as you can, so no egg leaks through the bottom of the bell pepper. If it leaks through that is okay!)

Sprinkle salt, pepper and chili flakes (optional.) Sauté for 2-3 minutes. Then cover with a lid for an additional 1-2 minutes or until eggs are cooked to your liking.

Lay eggs over a bed of leafy greens and sautéed onions.

  • 2 tbsp olive oil

  • 4 large eggs or egg whites or vegan egg replacement
  • 1/2 large onion, sautéed
  • 1 cup leafy greens of choice
  • pinch salt
  • pinch ground black pepper
  • pinch chili flakes optional
