Refreshing Watermelon Pizza

This easy to make watermelon pizza is refreshing, healthy dessert or can be turned into an afternoon snack that everyone can enjoy! Layer lactose free yogurt, berries and top with fresh mint!

Who doesn’t love pizza shaped things? This is one of those recipes that everyone will enjoy, especially watermelon enthusiasts! It’s perfect to make as an appetizer for a BBQ, after enjoying a long day out in the lake or relaxing in the backyard. Craving a healthy dessert or snack? Make this watermelon pizza next time you are craving something sweet and refreshing!

This recipe is also perfect for when you are hosting a brunch at home or going to a friends house!

Lactose Free Yogurt

Some of you may know and other may not but lactose isn’t always my best friend. If fact, there are many people like myself who develop lactose intolerance as they get older. Recently we discovered this totally delicious dairy brand. Green Valley. It is still real dairy, just minus the lactose! We absolutely LOVE it!!!

If you can’t consume dairy products, use your favorite non-dairy yogurt!

Don’t have tummy problems like us. Enjoy your favorite yogurt on this watermelon pizza!

Instructions

Using a sharp knife, cut a watermelon in half. Then slice off a piece down the middle, about 2 inches thick (this will become the “crust”) The individually slice the crust into 6 slices.

Using a spoon, dollop a spoonful of your yogurt on the watermelon slices leaving a bit of empty space on the edges of your “crust”.

Layer your fresh fruit on top as you please. Get creative with it!! You can add as little or as many toppings as you like! (We like a happy medium, but that’s just us!)

Garnish with fresh mint for an extra refreshing taste if desired.

  • 6-8 large strawberries sliced
  • 6-8 large blackberries
  • 6-8 large raspberries
  • fresh mint leaves

Notes

We recommend using a sharp knife to cut the watermelon. This will help get nice even cuts.
Use your favorite fruits, if you don’t like berries consider using oranges, peaches…and fruit really! Personalize this watermelon pizza to your liking.
Make as many watermelon pizza “crusts” as you’d like!
