No Churn Dairy Free Vanilla Ice Cream

No ice cream maker or ice cream attachment? Fear not! This easy to make homemade Vanilla ice cream is sure to cure your sweet tooth and keep you cool all summer long! It also happens to be dairy free and vegan friendly!

Ice Cream Made Easy

Homemade ice cream is achievable! I know there are tons of recipes out there that may have you scratching your head at times. I have been there.

This recipe is very simple. It only has four ingredients. You don’t need a churn. Once you have whipped and mixed everything together, the ice cream batter will be poured into a freezer safe container. In a few short hours you will have the perfect dairy free vanilla ice cream!

What type of containers can I use to store ice cream?

You can store you ice cream in an metal/steel loaf pan, insulated tub, paper containers, freezer gallon bags, and freezer safe plastic containers. Do not use a glass container to store ice cream. Glass can potentially explode in the freezer when wet ingredients begin to expand.

Instructions

Before we get started on the ice cream base. You will want to see your mixing bowl into the freezer or 15-30 minutes. This will help with whipping the coconut milk faster.

In a large bowl, using stand mixer or hand mixer whip the coconut milk until it forms small peaks. (Don’t over whip!) The whipped coconut milk will be done when you pull the beaters out and stands on its own.

In another medium size bowl, whisk together the vanilla, salt, vanilla bean (optional) and coconut sweetened condensed milk.

Then gently pour sweetened condensed milk into whipped coconut milk. Fold with a spatula, slowly incorporating the two together. So they are light and aerated.

In an ice cream container or freezable container add an even layer of whipped coconut milk. (If you desired, you can add some chocolate, fruits or anything you like in your ice cream before placing in the freezer.) This recipe will make a little over 1 quart of ice cream!

Freeze for 4-6 hours. Serve in a bowl or cone with your favorite toppings!

Add all the toppings!

Before serving vanilla ice cream, let it thaw at room temperature for a few minutes. This will help the ice cream come out easier. Dairy Free based ice creams do tend to get colder faster, and freeze almost completely.

Once ice cream is ready to go. Add a scoop or two into your favorite waffle cone or bowl. Then there is just one more thing to do. Add all the toppings you want, or if you like your ice cream with out toppings don’t add any.

  • 1 tbsp Vanillla extract

This recipe makes a little over 1 quart of ice cream.
Let ice cream sit for a few minutes at room temperature before serving. We find it much easier to scoop it out when we do this!
Chill mixing bowl before starting recipe. Place in freezer for 15-30 minutes. This will help full fat coconut milk whip faster and more effectively.
