This low carb, vegan, gluten free, keto friendly Fruit Tart might sound like it is too good to be true. BUT It is so much more! It truly is the perfect dessert for anyone!

What makes this fruit tart so great? You barely have to do any baking. The crust only takes about 10 minutes in the oven. Which make everything from there a breeze. The crust coolS down as you make the Strawberry pudding for the fruit tart.

This is one of those desserts that you are absolutely proud of at the end. You get to decorate it whatever you way you want with all your favorite fruits.

The Filling

My favorite part about this fruit tart is the filling! Traditionally fruit tart fillings are made out of marsclpon. Which is a great way of making a fruit tart. BUT have you every tried strawberry pudding? OH MY GOSH!! This is one of our favorite ways of making this low carb summer tart.

Instructions

Tart Crust

Preheat oven to 350F and spray 9 inch tart or pie pan with butter spray or coconut oil.

In a medium sized bowl combine almond flour, melted butter sea salt and confectioners sugar, mix until it slightly sticks together.

Evenly spread tart dough in pan. Using your hand, press down the bottom and the walls of the pan. Make holes on the bottom of the tart dough with a fork.

Bake in oven for about 8-10 minutes, until golden and then remove from oven. Allow the tart crust to completely cool down.

Strawberry Pudding

Follow the manufacturers instructions on how to make your pudding. If you are using Simply Delish Strawberry Instant Pudding (click here to go to website, and use code: DELICIOUSLYMARTA10 for an extra 10% off at checkout), beat together milk and powder with a stand mixer or hand help mixer for at least 2 minutes. Until the pudding takes shape.

Assembling the Tart

Once pudding is ready, pour it over the crust. Evenly spread, so it make a flat surface.

Get creative with your fruits! Add your berries and any other sweet fruits you may like on top!

Ingredients
  

Tart Crust

  • 2 1/4 Cup Almond flour
  • 1/4 Cup Powdered erythritol Swerve Confectioners
  • 5 Tbsp Melted vegan butter Earth Balance or your favorite butter
  • Pinch Sea salt

Pudding

  • 1 Pkg Natural Strawberry Flavor Instant Pudding Simply Delish
  • 2 Cups Milk Or 1 1/4 cup for milk substitute

Tart Toppings

  • 1 Cup Strawberries sliced
  • 1/2 Cup Blackberries
  • 1/2 Cup Raspberries
