Chili Cornbread Skillet

This delicious, hearty Chili Cornbread Skillet will soon become your new favorite comfort food. It is super easy to make and perfet for the whole family to enjoy on chilly nights.

We love making this Chili Cornbread Skillet after we make a big batch of our Chili (click here for full recipe). It’s the perfect way to use up any left overs!

When ever I make this dish it takes me back to Fall at my grandmother’s home in Colorado. She use to make a very similar dish called tamale pot pie. It was perfect for those chilly fall evenings in the dessert. There was something so comforting about a nice hot cup of chilly with cornbread on top. Sitting out in the back patio looking up at the autumn sky. What great memories. I hope this dish brings you comfort and good memories with the ones you love.

Instructions

Make a big pot of our delicious chili (click here for recipe).

Spray a large oven safe skillet with cooking spray. Then set aside.

Preheat the oven to 425F. In a large bowl, stir together cornmeal, flour, sugar, baking powder, and salt.

In a medium sized bowl, whisk together milk, egg, and oil. The pour milk mixture into the bowl with the cornmeal. Stir together.

In a large oven safe skillet add 5-6 cups of chili to where the skillet is a little over half way full. Then carefully pour the cornbread batter over the chili. If needed spread it around until It is even on to top.

This part is optional, add slices of jalapeños on top of the cornbread batter and fresh herbs like oregano and rosemary!

Bake for 25-30 minutes or until the surface of the cornbread is golden brown.

Enjoy with sour cream, cheese, fresh herbs and more jalapeños for a spicy flare!

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup organic cane sugar
  • 4 tbsp baking powder
  • 1 tsp salt
  • 2 cups milk
  • 1 large egg
  • 1/4 cup vegetable oil or olive oil
  • 15.25 oz sweet corn liquid drained from can
  • 1 large jalapeño optional
  • fresh rosemary optional
  • fresh oregano optional

The Best Chili Recipe does not have to be made in an instant pot. Follow the same step in a large pot. Place a large pot over medium high heat. Sauté onions, and garlic. Then toss in the meat. Allow the meat to brown. Then add spices, followed by the tomato sauce and diced tomatoes. Mix in cacao powder and sugar. Lastly toss in all the beans. Allow the pot to come to a simmer for about 20-30 minutes. Serve warm with your favorite toppings!
