Zucchini Tots

Zucchini Tots are the perfect way to trick those you live with to eat their veggies! These zucchini tots are kid approved. This is also a perfect recipe to make when you have a few zucchinis in your garden or recently bought at the store! They are prefect snack, side and a small meal.

Is there someone in your life that doesn’t enjoy eating vegetables? This is a great recipe to get those people to eat their greens! When my boyfriend and I first started dating, it was almost impossible to get him to eat his greens. I had to come up with clever ways to sneak in a few servings of vegetables a day.

This recipe I created around football season. He would always ask me to make him a snack or a few side dishes to eat while watching the games. We happened to have a few zucchinis and the rest is history.

Are you a dipper?

Just like regular tots, we love to dip our zucchini tots. A few of our favorites, the classic ranch dressing. Who isn’t a fan of ranch? When ever I have left over BBQ sauce we dip these bad boys in it. One of my personal favorites, pale ale honey mustard from Trader Joe’s! Instructions

Preheat oven to 400F degrees. Line a baking sheet with parchment paper, and spray with cooking spray.

Grate zucchini into a large bowl with a towel at the bottom of it. Grate until you have about 2-2.5 packed cups. 

Wring all of he excess water out of the zucchini. There will be a ton of water that comes out. That is normal. Keep wringing until there is no more water. 

In a medium bowl, combine zucchini, egg, cheese, breadcrumbs, salt, pepper, thyme (optional) and Italian seasoning (optional.) 

Spoon about a tablespoon of mixture in your hands and roll into small ovals. Then place on the baking sheet. Repeat this until all the mixture has been used. 

Bake in the oven for 10-12 minutes until the top begins to brown then flip onto the other side and bake for an additional 1o-12 minutes or until golden brown. Makes about 28-32 tots. 

Dip into your favorite sauce, we love dipping these zucchini tots into ranch, bbq sauce and pale ale mustard!

Feeling a little more healthy?

I have to be honest, after I eat a batch of these I always feel a little more “healthier” because I incorporated more greens to our dishes. Anyone else feel like that after eating greens?

*Zucchini has a lot of water, when wringing the grated zucchini we recommend using kitchen towel, this will help ensure that all he moister comes off. If a kitchen towel is not available, use a few paper towels to wring water out. 
* Thyme and Italian seasoning are optional, when we are feeling like adding a small twist to these we love to add a dash of each!
