Fall is one of my favorite seasons. There is just so many endless possibilities. One of the biggest reasons why I LOVE fall is because it just feels so homey. It’s just such a feel good season. Especially since it is apple picking season! This means I get to spend quality time with family and friends!
This past week we took a trip to the Apple Farm. We got tons of honey crisp apples….maybe a little more than we could handle. So what better way to use them, then in a pie!
Part I: Vegan + Gluten Free Crust (9-inch)
- Preheat oven to 425 F
- In a medium size bowl mix together flour and salt.
- Cut vegan butter into small cubes.
- Add cubed butter to flour mixture.
- One tablespoon at a time, add cold water. (3-4 tablespoons)
- Use a pastry blender to break down butter. It will start to combine with flour.
- Once butter is broken down, using your hands, pack the dough into a ball.
- Cover dough with saran wrap, place in fridge for 30 minutes.
Roll, roll, roll your crust
I am going to be honest, this crust was a little tricky at first. Rolling it out requires a good amount of time and patiences. Adding a good amount of flour on top will help it roll easier.
Grease (with vegan butter) and flour your pie pan.
Gently transfer your pie crust to the pan. This is what happened to me.
It is okay, it’s fixable!!
Gently press the pieces back together with your fingers.
Using a fork, gently press the edges of your crust to make pretty lines!!
Delicious Apple Filling
In a medium size bowl combine together flour, sugar, flour, salt, cinnamon, and nutmeg.
Set bowl aside one mixed together.
Thinly slice apples. (you can have them uber thin or a little thicker, which ever you prefer)
Amateur Tip: 6 cups of apples is roughly 6 medium sized apples.
In a large bowl, add a small amount of apples. Then add a small amount of the dry ingredients. Mix together.
Continue doing this until all the apples and dry ingredients have been mixed together.
Let filling sit for 7-10 minutes. This will allow the flavors to combine with each other.
Let’s Fill The Pie!
Place apple filling into crust!! If you have any left over crust pieces, sprinkle them over the pie.
Place aluminum foil over the pie.
The pie is now ready to go into the over! Your oven should be at 425 F. Bake pie for 40-50 minutes. During the last 10 minutes of baking, remove the foil. This will help your crust turn a nice golden brown.
