I was advised by my doctor to avoid dairy products as much as possible. Ever since then, I have been on a journey of trying to find alternatives to favorite dishes and treats.
Recently, I made a gluten cupcake. I wanted to create a vegan frosting for the top!
Here is how to make vegan pink vanilla buttercream frosting!
Add softened vegan butter to a large mixing bowl. Use an electric hand mixer to cream butter. It should be nice and fluffy. Add vanilla extract and combine together.
Add powdered sugar in ½ cup measurements. Continue mixing until everything if fully and combined together. If your frosting happens to be too thick, and 1 tbsp of flaxmilk until desired consistency is achieved!
Add a small drop of pink food coloring. And mix until frosting is a light pink color. If you do not want pink frosting just skip this step.
Use frosting on a cake or cupcakes immediately. If you don’t want to use it right away store in the refrigerator for up to a week or freeze up to a month. If you freeze it, let is thaw before using!
Earth Balance Vegan Butter, I have found to be more success full in keeping its shape. The frosting should not melt at room temperature. If the frosting started to soften well frosting, use the good ol’ fridge trick. Place it in the fridge for a few minutes so it begins to stiffen.
