Asian Spring Mix Salad with homemade sesame seed vinaigrette

Looking for something to put together quickly on a lazy afternoon? Or after a long day at work. Don’t want to risk having something unhealthy? This Asian Spring Mix Salad with homemade dressing is perfect for those days when we don’t want to put a lot of effort into a dish or a side dish.

I am notorious for eating lots of salads. You ask me what I’m craving, salad. What do I want for dinner, salad. Why? Salads have endless possibilities! You can add anything to them. This salad in particular, I grew up eating.

May parents made many Asian inspired dishes when I was growing up. Over the years, I have made this salad my own. Now, it’s one of my staple on-the- go salads. You will get a sweet and salty dressing, that pairs perfectly with the crunchy vegetables.

A few of my favorite highlighted ingredients in this recipe are:

Snow Peas: Not only do they have crunch when you bite into them. They contain minerals such as iron, calcium and potassium. They are also a great source of dietary fiber!

Red Cabbage: When you bite into red cabbage you will soon notice it tastes nothing like green cabbage. It has a deeper, earthier taste. That is because vitamin folate and vitamin C. Red cabbage also adds great color to your salad!

Almonds: They are jammed packed with a lot of healthy fats, fibers and protein!



Creating the Dressing

In a small bowl, add tamari, rice vinegar, sesame oil, agave, garlic, ginger and sesame seeds to a medium size bowl. Whisk to combine. Taste and adjust seasoning as needed. (if you want it sweeter add a tad bit more agave, want it a little more bitter add a tad bit more tamari.) Then place dressing in fridge well you prep and cut vegetables.


In a large mixing bowl, add lettuce, cabbage, carrots, snow peas, almonds, green onions. Lightly toss. Then add oranges and toss once again.

Take dressing out of the fridge. Whisk before pouring over salad. Pour over the vegetables, and gently toss to combine (some of the dressing my settle at the bottom, that is normal.) Top with wonton crispy noodles and sprinkle with sesame seeds!

It’s crunch times

There you have it. Take this salad on the go to work or for a post workout meal!
