  1. In a pan sauté the garli in oil over low heat. Allow to cook for a few minutes until garlic begins to become soft and fragrant. (Keep temperature low, we don’t want the garlic to brown.) Then add thyme and garlic, and mix together with garlic.

  2. Add cauliflower, and combine well with herbs. Add onions (optional.) Sprinkle a little bit of salt, Italian salt and pepper. Lastly pour water over cauliflower and bring water to a boil (at medium heat.) Once water is boiling lower the heat to simmer and cover the pot to cook the cauliflower is tender and very soft. This will take about 10 minutes.

  3. Once cauliflower is cooked, transfer the entire cooked veggies into a blender or food processor, and additional season with salt, Italian salt and pepper, if needed. Blend until very smooth and creamy. If needed add more boiling hot water to blender until reaching texture desired. (2 tablespoons at a time.) Be careful when you are blending hot liquids, the pressure does tend to build up, take caution when opening the lid.

  4. Season with additional herbs, salt and pepper, if desired. Serve wam with your favorite pasta or veggie substations!!
