Peppermint is the unofficial flavor of the winter season. These vegan holiday cookies are a cross between peppermint paddies and sugar cookies! Soft, chewy and full of peppermint flavor and chocolate in every bite. These vegan peppermint sugar cookies are perfect for cookie boxes and cookie exchanges!

Peppermint sugar cookies are the perfect vegan holiday cookie. This recipes is easily one of my favorites. Peppermint is the unofficial flavor of the holiday season. In my opinion these cookies taste amazing, dipped in chocolate and drizzled with crushed peppermint candies. Delish!

Vegan peppermint sugar cookies were made in my test kitchen a few years ago. One of my dear friends had just gone vegan and she was missing all the holiday treats. At the time vegan treats and products were not as accessible as they are today. I decided to surprise her and began my journey on learning how to bake vegan. 

Learning new things can be a challenge. Sometimes things come out great. Other times they were a complete fail, like what did I just bake fail. Thankfully, over the years I have acquired some knowledge about vegan baking! Cheers to learning and growing, am I right?

What you will need?

1 cup vegan butter, room temp.

1 cup sugar

1 1/2 tsp peppermint extract

1 tsp vanilla extract

2 1/3 cup all-purpose flour

1 tsp baking powder

1 cup vegan chocolate chips, melted

1/3 cup crushed peppermint candy

How to make Vegan Holiday Cookies?

Preheat oven to 360F degrees. Start by lining a baking sheet with parchment paper and set aside. 

In a mixing bowl or stand mixer, add sugar and butter and beat at high speed until fluffy.

I love taste testing before adding in the flour, baking powder, peppermint extract, vanilla extract. Mix until it starts to come together.

Take dough out of mixer, then place on top of some parchment paper. Using a rolling pin, roll out dough until its about 1/4 inch thick. Use a circle cookie cutter to create the shapes of the cookie, followed by transferring to the baking sheet.

Bake cookies for 7-9 minutes or until slightly puffy with lightly brown edges.

Next, allow cookies too cool down on the baking sheet for about 5 minutes. You are almost ready to enjoy, let cookies have cool down and melt chocolate chips in the microwave. Dip one side of the cookie into the chocolate. Finally, sprinkle crushed peppermint candies over the cookie. Place cookies on a cooling rack and repeat the process until all cookies are coated with chocolate and peppermint candies!

Lastly, store in an airtight container or ziplock bag for up to 7 days if you’re not eating them right away!

  5. When the cookies have cooled down. Melt chocolate chips in the microwave. Dip one side of the cookie into the chocolate. Then sprinkle crushed peppermint candies over the cookie. Place cookie back on the cooling rack and repeat until all cookies are coated with chocolate and peppermint candies!

  6. Store in an airtight container or ziplock bag for up to 7 days!
