Vegan Peppermint Sugar Cookies

Description

Peppermint is the unofficial flavor of the winter season. These vegan peppermint sugar cookies scream holiday season is upon us! Soft, chewy and full of peppermint flavor and chocolate in every bite. These cookies are perfect for cookie boxes and cookie exchanges!

Ingredients
  • 1 cup organic cane sugar
  • 1 cup vegan butter, room temperature (we use earth balance)
  • 2 1/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons peppermint extract
  • 1 teaspoon vanilla extract
  • 1 cup vegan chocolate chips, melted
  • 1/3 cups crushes peppermint candy
Instructions
  1. Preheat oven to 360F degrees. Line a baking sheet with parchment paper and set aside.

  2. Add sugar and butter to a mixing bowl and beat at high speed until fluffy. Add in flour, baking powder, peppermint extract, vanilla extract and mix until it starts to come together.

  3. Take dough out of mixer and place on top of some parchment paper. Roll out until dough is about 1/4 inch thick. Use a circle cookie cutter to create the shapes of the cookies, then transfer to the baking sheet.

  4. Bake for 7-9 minutes or until slightly puffy with lightly brown edges.Allow about 5 minutes on the baking sheet to cool down before transferring to a cooking rack.

  5. When the cookies have cooled down. Melt chocolate chips in the microwave. Dip one side of the cookie into the chocolate. Then sprinkle crushed peppermint candies over the cookie. Place cookie back on the cooling rack and repeat until all cookies are coated with chocolate and peppermint candies!

  6. Store in an airtight container or ziplock bag for up to 7 days!
