One Pot: Vegan Potato & Kale Curry Soup

Garnish Ideas


  1. In a large pot sauté over medium heat add olive oil and allow to warm. Then sauté onion, cook stirring occasionally until onions are soft and lightly browned.

  2. Add the curry paste, salt and pepper and cook for a minute more.

  3. Add the potatoes, mixing well with the onions. Then add coconut milk, give it a quick mix with the potatoes. Finally add the broth, water and green bean (optional.)

  4. Increase the heat to high to bring to a boil, then reduce heat to medium-high or medium. Enough heat to maintain a simmer. Let soup simmer uncovered for 15-20 minutes.

  5. Add the sesame seed oil, green beans and kale; cook for an additional 5 minutes or until vegetables are almost cooked all the way. Squeeze in half of a lemon into broth.

  6. Add noodles, cook for about 7-10 minutes or until noodles are throughly cooked.

  7. Serve soup warm. Garnish with chopped cilantro or parsley, more lemon juice, and/or jalapeños.
