  1. In a sauce pan, whisk together coconut milk, cacao powder and maple syrup.

  2. The pudding batter will begin to blend together. Put over medium heat. Whisk until completly smooth (this wont take longher the 2 minutes or so).

  3. Remove from heat from once it looks silky.

  4. Taste taste to make sure it is at preferd sweetness. (add as much or as little maple syrup as you like. If you prefer your chocolate add less, if you prefer it sweeter add more).

  5. Stir in salt and vanilla.

  6. Pour pudding into individual containers (serving size 3/4 cup) or into a large bowl.

  7. Cover pudding and refrigerate until it sets. It will take about an hour or so depending on your fridge. You can also let it set overnight!

  8. Enjoy with strawberries on top, coconutwhip cream and mint!
