Zucchini Tots are the perfect way to trick those you live with to eat their veggies! These zucchini tots are kid approved. They are prefect snack, side and a small meal.

Ingredients

  1. Preheat oven to 400F degrees. Line a baking sheet with parchment paper, and spray with cooking spray.

  2. Grate zucchini into a large bowl with a towel at the bottom of it. Grate until you have about 2-2.5 packed cups.

  3. Wring all of he excess water out of the zucchini. There will be a ton of water that comes out. That is normal. Keep wringing until there is no more water.

  4. In a medium bowl, combine zucchini, egg, cheese, breadcrumbs, salt, pepper, thyme (optional) and Italian seasoning (optional).

  5. Spoon about a tablespoon of mixture in your hands and roll into small ovals. Then place on the baking sheet. Repeat this until all the mixture has been used.

  6. Bake in the oven for 10-12 minutes until the top begins to brown then flip onto the other side and bake for an additional 1o-12 minutes or until golden brown. Makes about 28-32 tots.

  7. Dip into your favorite sauce, we love dipping these zucchini tots into ranch, bbq sauce and pale ale mustard!

*Zucchini has a lot of water, when wringing the grated zucchini we recommend using kitchen towel, this will help ensure that all he moister comes off. If a kitchen towel is not available, use a few paper towels to wring water out. 

* Thyme and Italian seasoning are optional, when we are feeling like adding a small twist to these we love to add a dash of each!
