Lemon & Strawberry Muffins
It is the first Friday of Spring! To kick off the #foodiefriday. A yummy almost guilt free muffin! There is butter….I can’t live without butter. It just makes everything taste so much better! These muffins can be enjoyed during breakfast, for a quick on the go breakfast. Or straight out of the oven with ice cream.
Preheat oven to 400 degrees.
In a large bowl, mix together egg, oat milk, avocado oil and vanilla. Then add almond flour, flaxseed meal, sugar, baking soda, and salt.
Using a fine grader, zest your lemon!
Optional: spraying pan or using liners.
Pour mixture into muffin pan. Recipe makes 12 muffins.
In a small bowl, mix raw sugar and flaxseed meal. Melt butter. Once melted mix with dry ingredients.
Crumble streusel on top of batter!
Now your muffins are ready to go in the oven!
Bake at 400 degrees, for 25-30 minutes.
Amateur Tip: Every oven is different. Check your muffins after 20 minutes. Just to make sure that they need more time.
