What are udon noodles?
Udon noodles are thick style noodles. They are made of wheat flour and used in Japanese cuisine. Udon noodles are used in many Japanese inspired comfort dishes. They are prepared and served in a variety of ways. They are sue in hot soup to stir fried dishes. The most common for they are used is in kake udon with kakejiru that is made with a variety of Japanese ingredients.

In a small bowl mix all sauce ingredients together and whisk together until combined.
Then set asideIn a wok heat olive oil over medium high heat. Add chicken and cook until it is no longer pink and starts to brown. Then add in the mushrooms and let them cook until the mushrooms start to soft and begin to brown.
Add the udon noodles and prepared sauce into the wok. Toss everything together and let the noodles cook unto they are heated through. Garnish with green onions and sesame seeds.
Do I have to use chicken breast?
The answer is, no! If you don't want to use chicken, you don't have to. This dish tastes equally as delicious with out the chicken. You can us beef, shrimp and tofu! If you decided to use tofu, you can always substitute the chicken broth to vegetable broth and make a yummy vegan dinner!
How to Store leftovers?
If you happen to have leftovers, fear not this dish tastes absolutely amazing the next day. Store in an airtight container for up to 3 days in the fridge.
