Bacon & Bourbon Ice Cream (Dairy Free)
This easy to make ice cream is perfect for any time of the year! Mixed with your favorite bourdon liquor and delicious homemade caramelized bacon bites!
This recipe was requested by a follower on Instagram. They asked for an ice cream recipe that had bacon and whisky! We were so ready to create it.
In light of their request I created a non-dairy, bourbon whiskey, with caramelized bacon bites ice cream!
What type of containers can I use to store ice cream?
You can store you ice cream in an metal/steel loaf pan, insulated tub, paper containers, freezer gallon bags, and freezer safe plastic containers. Do not use a glass container to store ice cream. Glass can potentially explode in the freezer when wet ingredients begin to expand.
At medium heat in a medium sauce pan, whisk coconut milks together. Once blended together, add sugars. Let sugar melt into coconut milks.
Slowly whisk in bourbon,(add up to two shots depending on how much of the taste you want in the ice cream.) Bring batter to lightly simmer for about 7-10 minutes. Then turn off burner.
Add vanilla extract and mix in well.
Allow batter to cool down at room temperature before placing in the fridge. Leave in the fridge for at least 3 hours. We want the batter to be nice and cold. If you aren’t super eager to get your paws on the ice cream. We recommend letting the batter sit over night in the fridge.
Preheat oven to 375 degrees
On a cookie pan place a layer of parchment paper. Line up strips of bacon. Sprinkle brown sugar on top of them.
Place bacon in oven for 15 minutes. Then take bacon out, and flip to the other side. Add more brown sugar on top. Then place in over again for 15 minutes.
Take bacon out and flip onto other side, leave in oven for 5 minutes extra minutes or until cooked to your liking.
Bacon will get a caramelized layer on top! Place on a cooling rack.
Once cooled off, cut bacon into smaller pieces. Set aside or store in an air tight container in the fridge until ready to use.
Prepare ice cream maker/bowl. Follow your manufacture instructions for making ice cream. Every ice cream maker/bowl works a slight differently. Don’t get discouraged if the first time you make ice, it doesn’t come out as planned!! It took me a while to become best friends with my churn.
Pour batter into ice cream maker/bowl and let it do its thing! Once ice cream begins to take shape, slowly add pieces of bacon. Allow the churn to mix in the pieces. Ice Cream should start to become soft serve. (If ice cream only achieve soft soft serve or soft serve. That’s okay! Just place it in a container and let your freezer do the rest of the work!)
When the ice cream is ready. Place into freeze container. If you would like extra bacon in your ice cream, add pieces while you pour ice cream into container.
