Sunday Sundae: Guilty Pleasure Apple Pie Ice Cream (Dairy Free)

It was an extremely stressful week at work. I got thrown a few curve balls. Some that had my stomach in knots. I have never experienced something like this in my life. I am a firm believer that everything comes our way for a purpose, whether good or bad. This week I felt like I needed to let some feelings out. Cooking and baking has always been therapy for me. One of my guilty pleasures is apple pie. Just something about apples with sugar, just hits the spot! So here is my attempt at making it into an ice cream!



Making the Filling

Cut apples into small squared pieces. In a sauce pan at medium low heat add butter. Once butter has melted add sugar, cinnamon and brown sugar. Whisk sugars until well blended with butter. Then slowly start adding apples. Allow 10-15 minutes under heat, turning apples until nice and soft. Let apples cool down to room temperature.

In a separate bowl crush vanilla wafers. Set aside until time to layer.

Ice Cream Base

In a medium size sauce pan at medium low heat add both coconut milks. Whisk milks until completely blended together.Add 3 tablespoons of sugar and 3 tablespoons of brown sugar. Allow sugar to mix into milks. Turn off heat and add vanilla extract. Whisk for 1-2 minutes. Store batter in fridge for an hour.

Mixer Time

Prep your ice cream bowl/maker. Pour cold batter into machine. Follow manufactures instructions.

In a freezer container, being to layer ice cream. Add a little ice cream, then a little apple filling. Top off with a wafer layer and repeat until container is completely full.

Save some apple filling to enjoy later on top of ice cream! Heat it up or set on top cold.

Let ice cream sit in fridge for at least an hour before enjoying!!
