The beauty of slow cookers is you can just throw everything in and let it cook!
Let’s Get Started
Set your cooker to high.
I normally add a small layer of avocado oil on the bottom of the pan. It’s not necessary. But I like doing it.
Next, add the chicken at the bottom of the pan.
Add all the spices! Then pour over the BBQ sauce. Using a spatula, mix around everything.
Put the top on the cooker. Let sit for 3-4 hours.
Come back after 2 hours to flip chicken around.
At hour 3 check to see if you can pull apart your chicken with a fork. If you can it’s almost ready!
I LOVE to pull apart all the chicken and put it back in the pot. So it soaks up all the delicious BBQ sauce mixture! Leave it in for 15 more minutes!
If you have access to fresh heirloom onions, wash and cut them up!
Add a layer of spring mix lettuce on a plate.
Add a bit of garlic powder, salt and pepper on the lettuce.
Then add the pulled chicken!
Sprinkle heirloom onions on the top. I also added some homemade ricotta cheese on my salad, but forgot to take a picture because it just smelt so good!!! I couldn’t wait to eat it.
