Vegan Peppermint Sugar Cookies

Peppermint is the unofficial flavor of the winter season. These vegan peppermint sugar cookies scream holiday season is upon us! Soft, chewy and full of peppermint flavor and chocolate in every bite. These cookies are perfect for cookie boxes and cookie exchanges!

This vegan peppermint sugar cookie recipe is one of my favorites. Peppermint is the unofficial flavor of the holidays. In my opinion these cookies taste amazing, dipped in chocolate and drizzled with crushed peppermint candies. Delish!

Tis’ the season of cookies! Cookies are all I want nowadays. Am I the only one?

These vegan peppermint sugar cookies were made in my test kitchen a few years ago. One of my dear friends had just gone vegan and she was missing all the holiday treats. At the time vegan treats and products were not as accessible as they are today. I decided to surprise her and began my journey on learning how to bake vegan.

Sometimes when I was learning how to bake vegan things would come out great. Other times they were a complete fail, like what did I just bake fail. Thankfully over the years I have acquired some knowledge about vegan baking! Cheers to learning and growing, am I right?

Ingredients

1 cup sugar
1 cup vegan butter, room temp.
2 1/3 cup all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoon peppermint extract
1 teaspoon vanilla extract
A cup vegan chocolate chips, melted
1/3 cup crushed peppermint Candy

Instructions

Preheat oven to 360F degrees. Line a baking sheet with parchment paper and set aside.

In a mixing bowl add sugar and butter and beat at high speed until fluffy. Add in flour, baking powder, peppermint extract, vanilla extract and mix until it starts to come together.

Take dough out of mixer and place on top of some parchment paper. Roll out until dough is about 1/4 inch thick and use a circle cookie cutter to create the shapes of the cookies. Then transfer to the baking sheet.

Bake cookies for 7-9 minutes. Or until slightly puffy with lightly brown edges.

Allow cookies too cool down on the baking sheet for about 5 minutes. Once cookies have cooled down and melt chocolate chips in the microwave. Dip one side of the cookie into the chocolate. Sprinkle crushed peppermint candies over the cookie. Place cookies on a cooling rack. Continue doing this process until all cookies are coated with chocolate and peppermint candies!

Store in an airtight container or ziplock bag for up to 7 days!

  • 1 tsp baking powder
  • 1 1/2 tsp peppermint extract
  • 1 tsp vanilla extract
  • 1 cup vegan chocolate chips, melted
  • 1/3 cup crushes peppermint candy

  • When the cookies have cooled down. Melt chocolate chips in the microwave. Dip one side of the cookie into the chocolate. Then sprinkle crushed peppermint candies over the cookie. Place cookie back on the cooling rack and repeat until all cookies are coated with chocolate and peppermint candies!
  • Store in an airtight container or ziplock bag for up to 7 days!
