Birthday Cake Truffles (Gluten-Free)
These tiny little balls of heaven are delightfully easy to make! Everyone in your household will soon become big fans! Don't like white chocolate? That's okay, dip these bad boys in your favotire chocolate, and let them rule your day!
- 1 package birthday cake gluten-free creme sandwich cookie (about 24 cookies) goodie girl
- 4-5 oz dairy-free cream cheese green valley creamery
- 1/4 cup powdered sugar (optional, recipe can be made without)
- 2 tbsp rainbow sprinkles
- 1 tsp vanilla extract
- pinch kosher salt
- 1 1/2 cup melting white chocolate
Line a small baking sheet with waxpaper. In a large bowl, combine glute-free birthday cake cookies and crush. Mix in rainbow sprinkles.
In a small bowl, add dairy-free cream cheese, powdered sugar. Mix together with a hand mixer until creamy. Then add vanilla and salt. Mix until combined together. Grab crushed cookies, and combine into cream cheese mixture. Mix until well mixed together.
Using a small cookie scoop, form the birthday cake cookie mixture into small balls and place on baking sheet. Repeat until all cookie mixture has been used. Then place baking sheet in freezer for 10 minutes,.
Well cookie balls are in freezer. Ina a medium bowl add white chocolate. Microwave in the oven for 30 seconds. Repeat until chocolate is melted.
Once cookie balls are chilled, dip them in the white chocolate. Then place on the baking sheet.
Sprinkle the rainbow sprinkles as you go. Then return to freezer for 10 more minutes. Then serve!
