  • 3 kohlrabi
  • 2 carrots
  • 1 orange bell pepper
  • 1/4 cup cilantro
  • 2 lemons
  • 1 tsp Kosher salt
  • 1 tsp ground black pepper
  • 1/4 cup shredded almonds


  • Thinly slice kohlrabi, making into matchsticks. (Peel and trim kohlrabi. Cut off the ends, cut in half. Then thinly slice.)
  • Cut carrots into thinly planks.
  • Place in a medium bowl with chopped bell peppers, cilantro, almonds and lemon zest.
  • Squeeze lemons into a small bowl. Whisk together, lemon juice, salt and pepper.
  • Toss with salad. Refrigerate until serving. Garnish with zest, almonds and cilantro. Also tastes delicious the next day!
