Quick & Easy Kohlrabi Salad

- 3 kohlrabi
- 2 carrots
- 1 orange bell pepper
- 1/4 cup cilantro
- 2 lemons
- 1 tsp Kosher salt
- 1 tsp ground black pepper
- 1/4 cup shredded almonds
Thinly slice kohlrabi, making into matchsticks. (Peel and trim kohlrabi. Cut off the ends, cut in half. Then thinly slice.)
Cut carrots into thinly planks.
Place in a medium bowl with chopped bell peppers, cilantro, almonds and lemon zest.
Squeeze lemons into a small bowl. Whisk together, lemon juice, salt and pepper.
Toss with salad. Refrigerate until serving. Garnish with zest, almonds and cilantro. Also tastes delicious the next day!
