Pepper Egg In a Hole

This healthy Peppers egg in a Hole recipe is super easy to make, a light breakfast and full of bright flavors in a simple dish. It is also low carb and keto friendly!

  • 2 tbsp olive oil
  • 1 large bell pepper, sliced into 3/4 inch rings about 4 slices per 1 bell pepper
  • 4 large eggs or egg whites or vegan egg replacement
  • 1/2 large onion, sautéed
  • 1 cup leafy greens of choice
  • pinch salt
  • pinch ground black pepper
  • pinch chili flakes optional


  • In a large skillet, heat olive oil over medium/high heat.
  • Cut peppers into 3/4 inch rings and remove the seeds and centers. Plac sliced peppers into the pan and let them sauté for a minute or two, then flip to the other side and repeat.
  • Crack one egg into the center of each bell pepper slice. (Do it as slow as you can, so no egg leaks through the bottom of the bell pepper. If it leaks through that is okay!)
  • Sprinkle salt, pepper and chili flakes (optional.) Sauté for 2-3 minutes. Then cover with a lid for an additional 1-2 minutes or until eggs are cooked to your liking.
  • Lay eggs over a bed of leafy greens and sautéed onions.
  • Enjoy!
