Low Carb Summer Fruit Tart
This easy to make low carb, vegan, gluten free, and keto friendly Summer Fruit Tart is filled with a delicious strawberry pudding and topped with fresh berries. Making it the perfect dessert to take to any summer get together, party or celebration!
- 2 1/4 Cup Almond flour
- 1/4 Cup Powdered erythritol Swerve Confectioners
- 5 Tbsp Melted vegan butter Earth Balance or your favorite butter
- Pinch Sea salt
- 1 Pkg Natural Strawberry Flavor Instant Pudding Simply Delish
- 2 Cups Milk Or 1 1/4 cup for milk substitute
- 1 Cup Strawberries sliced
- 1/2 Cup Blackberries
- 1/2 Cup Raspberries
Preheat oven to 350F and spray 9 inch tart or pie pan with butter spray or coconut oil.
In a medium sized bowl combine almond flour, melted butter sea salt and confectioners sugar, mix until it slightly sticks together.
Evenly spread tart dough in pan. Using your hand, press down the bottom and the walls of the pan. Make holes on the bottom of the tart dough with a fork.
Bake in oven for about 8-10 minutes, until golden and then remove from oven. Allow the tart crust to completely cool down.
Strawberry Instant Pudding
Once pudding is ready, pour it over the crust. Evenly spread, so it make a flat surface.
Get creative with your fruits! Add your berries and any other sweet fruits you may like on top!
